TRAIL BIKKIE
Ingredients
- Flax Egg: 1 tbsp flax meal + 3 tbsp warm water 
- 1 cup rolled oats 
- 2 tbsp pumpkin seeds 
- 2 tbsp sunflower seeds 
- ¼ cup melted coconut oil 
- ¼ - ⅓ cup maple syrup (adjust sweetness to taste) 
- 1 tsp vanilla extract 
- 1 tbsp chia seeds 
- 2 tbsp goji berries, cranberries, raisins, or chopped dates 
- 2 tbsp desiccated coconut 
- 1 tsp baking powder 
- Pinch of salt 
Method
- Preheat oven to 180°C (350°F). 
- Prepare flax egg: Mix flax meal with warm water, stir, and let sit for 5 minutes. 
- Blend dry ingredients: Pulse oats, sunflower seeds, and pumpkin seeds in a blender for a few seconds—just enough to break them up while keeping some texture. 
- Combine: In a large bowl, mix all wet ingredients. Stir in dry ingredients until well combined. 
- Shape & Bake: Scoop heaped tablespoons of batter onto a lined baking tray. Bake for 15-18 minutes, or until golden. 
- Cool: Let cookies sit for 10 minutes before transferring to a cooling rack for another 5-10 minutes.
