CHIA JAM & GUMMIES
Not a week goes by where this is not in our fridge! We love just four ingredients transform into two recipes, a beautiful jam that you can serve as it, on toast, in porridge bowls etc etc the sky is the limit! Then transforming into our favourite gummies that go down a treat with our kids!
Ingredients
- 2 cups frozen berries 
- ¼ cup chia seeds 
- 1 cup water 
- 2½ tbsp grass-fed gelatin 
- 5 tbsp water (to bloom the gelatin) 
Method
- In a saucepan over medium heat, combine berries, chia seeds, and 1 cup water. 
- Stir and mash with a fork for a few minutes. 
- Reduce heat to low and simmer for 10 minutes, allowing chia seeds to swell. 
- Pour 1 cup of the jam into a jar and store in the fridge. 
- In a small bowl, combine gelatin and 5 tbsp water. Let bloom for 1 minute. 
- Add bloomed gelatin to the remaining warm jam. Stir until completely dissolved. 
- Pour mixture into silicone moulds. 
- Set in the fridge for 2–3 hours or until firm. 
- Store in the fridge for up to 5 days (if they are not gobbled up instantly)
