5 MINUTE NOODLES

a NUTRITious update on a classic!


We’d be lying if we denied growing up eating two-minute noodles most days after school. But now that we’re older (and know what’s in them), they’re not something we’ll be buying for our kids on the regular.

Instead, we make our own super simple, one-pot five-minute noodles soaked in gut-loving broth and loaded with nutritious pantry staples. It’s a feel-good dish that’s just as comforting, delicious and supports our kids through the day. Broth & Noodles we use available here.


Serves 2

Age 12 months +


Ingredients:

1.5 cups bone broth - water + Best of the Bone

1 nest of noodles - Mie Noodles

1/2 cup frozen edamame, peas and/or corn

1/2 teaspoon sesame oil 

1/2 teaspoon tamari or coconut aminos (optional)

Fresh ginger finely grated (optional)

Protein ideas

soft-boiled egg

leftover shredded chicken

tofu


Method:

In a small saucepan, bring the broth or stock to a gentle boil. Add the noodles and cook for 5 minutes.

In the last minute of cooking, stir in your veggies. Remove from the heat and stir in the sesame oil and tamari, then top with ginger and your protein of choice.
