Packed with iron, omega-3s, zinc, calcium, and fibre, every single bite is working hard for your child's growing body. Think of it as a snack that looks like a treat but works like a superfood.

INGREDIENTS
1 cup puffed quinoa (or puffed rice or puffed buckwheat)
¼ cup hemp seeds
¼ cup chia seeds
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup desiccated coconut
¼ cup chopped dried apricots (or raisins/sultanas)
¼ cup choc chips (optional)
Wet mix
¼ cup tahini (or peanut/almond butter)
¼ cup melted coconut oil
2 tbsp maple syrup
METHOD
Add all dry ingredients to a bowl and mix well. In a small saucepan, melt the coconut oil then add tahini and maple syrup, stirring until smooth and combined. Pour the wet mix into the dry ingredients and stir until everything is well coated. Transfer to a lined loaf tin and press down firmly with a spatula. Freeze for 3 hours, then slice into fingers and store in an airtight container in the freezer.
