HONEY CRUNCH BALLS
The most delicious, nourishing little balls for when everyone wants something sweet.
Made in just one bowl and packed with wholesome ingredients, these are the kind of snack you’ll find yourself making on repeat. The hero is Mānuka honey. Naturally rich in compounds with antibacterial and antimicrobial properties, mānuka honey has long been valued for its immune-supporting qualities making these little bites as nourishing as they are delicious.
INGREDIENTS
3 Tbsp manuka honey
2 tbsp melted coconut oil
½ cup peanut butter, smooth and unsweetened
2 TBS hemp seeds
1/4 cup desiccated coconut
1 cup puffed quinoa or puffed rice
Pinch of sea salt
½ cup dark chocolate chips
METHOD
In a bowl add all of your wet ingredients: honey, coconut oil and peanut butter. Stir until well combined.
Then add the remaining ingredients (not including the chocolate) and stir until the batter is all nice and sticker and combined.
Place the batter into the fridge for half an hour to firm up before rolling.
Once chilled in the fridge, using a cookie scoop or a spoon, divide into your balls. This batch made me 12 large balls.
Melt your chocolate and dip your balls into the chocolate, set in the fridge until dried.
Store in the freezer, enjoy!
